Are you one who loves summer? I tend to wilt in hot
weather. This time of year is nice, though. I’m staying indoors, as usual for
me, and writing. Right now I’m working on DEBORAH’S DILEMMA, Pearson Grove
Series book 3. In it, Deborah makes dinner for a box social after church. One
of the things she includes in her basket is corn relish.
This
scene reminded me of a great corn salad which is the perfect accompaniment to
outdoor barbecues or indoor parties—or to turn an ordinary family meal into
something special. How can a salad do that, you ask? Whenever I serve this
salad, it’s a hit. I’ve had people ask for another portion of the salad instead
of dessert. And, this corn salad is so easy to prepare.
Corn
Salad
2
cans whole kernel corn, drained
2
cups grated cheddar cheese
1
cup chopped purple onion
1
cup chopped green bell pepper
1
½ cups Hellman’s mayonnaise
1
package chili cheese Fritos
Mix
all ingredients except Fritos and
chill. Just before serving, add coarsely crumbled Fritos and mix together. Except for Fritos, this may be prepared
a day ahead. Serves 6

covers. Pearson Grove is a fictional small town in a fictional small county in
North Central Texas. I enjoy reading and writing series where you come to know
all the main citizens in the small town. I hope you love reading small town

Pearson Grove is set near where my father was born. I think of it as a
tribute to him and his family. Though he passed away years ago, I believe he
knows and approves of this series.
In
the meantime, A BRIDE FOR GIDEON, book 16 of the multi-author Proxy Bride
Series, is available. Don’t you love this cover by Virginia McKevitt? The girl
on the cover is how I was supposed to look but something terrible happened.
Instead of glorious red hair, I have mousy dark blondish brown.
Ahem, I have
had red hair in the past—and blonde and dark brown and highlights. Currently,
I’ve gone back to my natural color. We’ll
see how long this lasts.

I really like your cover for "Deborah's Dilemma," but to be honest I like many of your other covers. Tasteful and with depth. I'm going to try your corn relish, but I've never heard of chili cheese Fritos. I'm going in search of them!
