Happy Valentine's Month!

One of the really cool things about being an author is that friends give you presents that reflect your work. This wall hanging is perfect for my Hearts of Owyhee series and came from my friend Sandra Straight. Yes, it was for Christmas but I think it works well for Valentine's Month, too.

Speaking of Honey Beaulieu (okay, we weren't, but still), she's been hanging out with Bernie lately.

We're still in the throes of a kitchen remodel and it looks like we will be for quite a while. Spring is on its way and the growing season doesn't wait for carpentry work. But meantime I'm thoroughly enjoying my new stainless steel countertop.
And I've done a little cooking on it, too. We're totally loving some blueberry chia seed pudding. So yummy, and keto, too!

One thing I've been craving lately is egg rolls. I really love them, but when you're allergic to grains finding a wrapper is somewhat challenging. I used to be able to buy tapioca skins, but we can't find them anymore, not even on Amazon. But these wrappers are soybean skins, and they worked out really well.

And of course I'm always trying new things in my Instant Pot. This is paneer, which is the Indian version of queso fresco. I'm telling you, this cheese is soooo good! I've used in place of mozzarella several ways, including in fathead dough, and it's been perfect every time. It's economical and so easy to make.

Amazon still refuses to let me leave a review for one of your books. I pointed out that if I buy the book, I should be able to leave a review. They won't budge. I suppose when you own half the world you can do as you wish. I urge you to share your brownie recipe. I wouldn't mind directions for making paneer, either. Love your kitchen counter.

I love Indian food, and one of my favorites is palak paneer, paneer with spinach.

DeleteYeah it won't let me review mom's books either I'm surprised they let me review yours Caroline. I can testify that Panera is delicious and so is the Chia seed pudding.
