The perfect Irish recipe for the month of March, when all
things lead to leprechauns and shamrocks.
I can’t claim this recipe as my own, as it’s a recipe from a
dear reader and writer. However, this bread won first place in a Columbus
baking contest!
You will need;
6 cups raisins
6 cups raisins
2 cups raisin water
Cover the raisins with water and cook until tender. Drain,
but save two cups of liquid after cooking.
Dry ingredients:
7 cups sifted flour
1 teaspoon allspice
4 teaspoons nutmeg
4 teaspoons baking soda
Wet ingredients: (all at room temperature)
1 cups softened butter
3 cups sugar
6 eggs
Sift together dry ingredients and set aside. Blend butter,
sugar, and eggs. Add 2 cups of raisin water, then add the wet mixture to the
dry mixture. Stir in the 6 cups of wet raisins and blend well.
Pour into 4 greased loaf pans. Bake 1-1 ½ hours at 325
degrees. When done, the top will spring back when touched lightly.
